Olives is a question of style---Todd English's style. Boston's all-American celebrity chef brought big and bold dishes of meats and pastas in generous proportions, well prepared and with vegetables as an afterthought, to the restaurant capital. His style includes an open kitchen with a brick oven, three seats to the kitchen counter and a table in the kitchen for eight or ten. He also brings a first-rate wine list. The stylish, off-the-lobby ground-floor bar-lounge and hotel dining room also has a suite of private dining rooms on the mezzanine. Like Danny Meyer's Union Square Café, Olives is not designed to be culinary competition for Jean Georges or Taillevent in Paris. English is looking to feed people well and bountifully and fill his seats with satisfied and happy repeaters. A meal here begins with a dish of roasted beets with spicy cashews, cilantro, thick Greek yogurt, and a honey-sesame vinaigrette. The menu also includes brick-oven flatbreads with toppings like black truffle Taleggio, caramelized onions and brown butter, as well as the Olives classic warm chicken and baby beet salad consisting of roasted beets, baby beet greens, walnut sherry dressing and manchego. Pastas tend to be winners, especially ricotta ravioli with bolognese sauce. For a main course, try the smoky braised short ribs with pumpkin gnocchi, arugula pesto, capra sarda and celery gremolata. Desserts are sinfully American, with the apple crisp among the better picks.
