The aloha spirit of Roy Yamaguchi, the Honolulu-based king of Euro-Asian food, is embodied in the largest of his global string of restaurants. Roy's 6,000-square-feet of space resonates with exuberance. In a hotel, but not seeming so, Roy's boasts the city's largest exhibition kitchen, a lively bar scene and an exceptionally friendly staff. Most importantly, that open kitchen knows how to make Asian fusion click. Wood-grilled Szechuan spiced baby-back pork ribs are lean and tender; macadamia nut-crusted mahi mahi is drizzled with a lobster butter sauce. Outrageously rich desserts demand attention, whether a melting chocolate soufflé or tiramisu cheesecake with mascarpone and Kona coffee.
