Wally's Beverly Hills Restaurant Review

: Wally's president Christian Navarro started out sweeping floors at the iconic Los Angeles wine store, but his potential as a sommelier was soon discovered and he became an integral part of the business. Decades later, he teamed up with brothers Maurice and Paul Marciano, co-founders of the clothing line GUESS?, to purchase the company and expand with Wally's Beverly Hills. (Additional locations are in the works for New York, London and other cosmopolitan centers.) This is a wine shop and gourmet marketplace, but it's also a restaurant and bar serving elevated bistro fare. The convivial atmosphere gives the feeling of an ongoing party. Out front are heat lamps and small tables flanking the glass doors of the entrance. Inside, the white marble bar and tables (mostly communal) are surrounded by impressive wine shelves. On one side, patrons will find the wine vault, and opposite it is the display of cheeses, chocolates, bread and more. Chef David Féau has quite the pedigree. In his native France, he worked with chef Guy Savoy before taking the reins at Lutèce in New York. In Los Angeles, he served as corporate executive chef of the Patina Restaurant Group, then took over as executive chef of The Royce. Now, he is expressing his culinary talents in a more democratic setting. Overall, the dishes are very satisfying and heartwarming. Among the starters, skip the carabinero shrimp in favor of the Wagyu steak tartare with foie gras and truffle-tarragon mayonnaise. Continue with Mary's bone-in half chicken with smashed fingerling potatoes, broccolini and Albufera sauce, or Cape Cod monkfish with caramelized salsify and cauliflower mushrooms braised in lobster butter. Desserts, such as an apple tart with vanilla ice cream, are simple but flavorful. Wine director Matthew Turner is ready to assist with selections, while charismatic bar manager Carl Roberts (formerly of Pacific Dining Car) can whip up a classic cocktail or creation du jour. We like the "Pomp it Up" --- a wordplay on pamplemousse (French for "grapefruit") --- with vodka, Giffard Pamplemousse Rose and grapefruit juice. Since Wally's Beverly Hills is open until 2 a.m., it's a great spot for a late-night bite or gourmet shopping expedition.
