Located in a chic Japanese metalworking studio in a particularly industrial section of Williamsburg, Yuji Ramen serves up hard-to-find, experimental ramen dishes that are well worth the trek. The focus is on mazemen, a dry (i.e. no broth) ramen that became a trend in Tokyo in the latter part of the last decade but has hardly made the jump across the Pacific. Chef Yuji Haraguchi’s concoctions are creative: a carbonara-like bacon and egg bowl and uni miso are the best of the small (rotating) selections. There are also a handful of buns: pork and kimchi justify ordering a second round while the shiitake mushroom bun was bland and forgettable. A long list of artisanal cocktails and Asahi beer on tap make Yuji Ramen a drinking destination as much as a foodie spot. Originally conceived as a “pop up,” kitchen staff have said they’re confident Yuji Ramen will be sticking around for a while. Let us hope.
