Chiam---with its greenhouse-style dining room and other sleek, contemporary rooms---looks more American than Chinese. To reinforce the notion, owner David Kong has a prodigious wine list with emphasis on California, France, Italy and Australia. Start with the excellent cilantro-shrimp dim sum. Then, look to the sea. Chef William Mui specializes in Hong Kong-style seafood dishes like delicious prawns made with Grand Marnier.
