If you’ve longed for a more modern, countrywide approach to Chinese cuisine, La Chine is the place for you. The restaurant is as elegant as its concept and food, elevating the notion of Chinese fare to a new level. In a beautifully redone room where Oscar’s Brasserie sat for decades, La Chine offers fine, creative dining, the product of a team of chefs whose expertise comes from the heart and from the home cooking of their country. A Chinese raw bar inspired by the raw seafood traditions of Zhejiang includes attractively presented Long Island fluke with smoking peony oil, and oysters with Chinkiang vinegar granité and cucumber star anise mignonette. Other unusual selections, like crispy Spanish mackerel with pickled napa cabbage and smoked soy dressing from the Guangdong province, are served under a cloche and presented with two sets of chopsticks, one for picking up the food from the platter and a second for your personal dining. Don’t miss the exciting Berkshire pork collar glazed with The Waldorf’s own rooftop honey and finished with a sugar crust made crackly from liquid nitrogen poured over it. For dessert, choose the coconut tapioca soup, arranged like a MoMA painting with dragon fruit, mango and horned melon; and a specialty cocktail from mixologist Leo DeGroff. A carefully curated wine list has 15 choices by the glass, skewing French and American, including Champagne and sweet wine.
