As you enter the lively bar area with its pony-covered seating, past the raw seafood bar with high-backed red leather chairs, and along a corridor filled with a serious collection of chilled wines, it is evident that The Mark Restaurant by Jean-Georges is a chameleon of sorts. At the end of the trek is the subdued main dining room, more formal than the others but still relaxed in attitude and appearance. Peach-toned banquettes, columns of light, copper accents and Mondrian-like panels of color flank the quiet room which sits under a grand skylight ceiling. Dining, like the clientele which becomes increasingly younger as the evening progresses, is a varied affair with choices ranging from the casual (black truffle pizza or truffle-and-Brie-topped cheeseburger) to the elegant (slowly cooked salmon with julienne vegetables in a basil vinaigrette or a beautiful tousle of fettuccine with a light toss of Parmesan cheese, black pepper and Meyer lemon) mixing equally well. Standout dishes include a hearty grilled veal chop accompanied by rhubarb and English peas and Jean-Georges Vongerichten signature items like gingered peekytoe crab cake with grapefruit and avocado from Nougatine at Jean Georges, steamed shrimp salad from Jean Georges proper, as well as the molten chocolate cake made famous at JoJo. Service is professional and a nice selection of wines is offered by knowledgeable servers. The bar area serves a condensed menu until 1 a.m., giving the Upper East Side a chance at designer-chef dining post-theater.
