Everest, chef Jean Joho’s flagship atop the Chicago Stock Exchange, continues to offer the peak of French cuisine. Perhaps it’s not a coincidence that the Alsatian chef’s refined restaurant bears the name of the earth’s highest point, as dining here is truly an elevated experience. Sitting on top of the world, he also governs an array of other ventures including Brasserie Jo in Chicago and Boston and Eiffel Tower in Las Vegas. We commend chef Joho for making our Top 40 for the third year in a row.
