Frasca is a remarkable restaurant—fascinating, really, when considering the sum of its parts: it specializes in Italian food and wine from a region most Americans have probably never heard of (Friuli-Venezia Giulia); it's an earnest neighborhood restaurant serving gourmet-quality food; and the neighborhood in question isn't North Beach or Chelsea, but in the Rocky Mountain town of Boulder. Chef/co-owner Lachlan Mackinnon-Patterson also emphasizes local Colorado meats and products, and is active in the Slow Food movement.
