Named after founding chef Masataka Kobayashi, who passed away only a year after opening it, this venerable San Francisco restaurant has proven to be an incubator for culinary talent. Julian Serrano and Ron Siegel, both Top 40 chefs, have served as the top toque. The latest to earn that title is The French Laundry alum Gregory Short, who has been carrying on the tradition of topnotch but accessible Cal-French cooking that is both original and mindful of seasonality since 2004.
