When Vie opened to great fanfare in 2004, its chef-owner Paul Virant was already well known among Chicagoans for his stints at Blackbird and Everest. His New American cuisine tips its hat to classic French technique, and reflects the season and his appreciation of both small family farms and exotic ingredients. Virant is particularly known for mixing sweet and sour tastes, as well as canning and pickling.
