French-born chef George Mavrothalassitis is a native of Marseilles but fell in love with Hawaii in 1988, where he subsequently moved to open Chef Mavro. French techniques — and imported ingredients like fresh truffles — inform his dynamic contemporary Hawaiian Regional Cuisine that evolves and revolves around local products sourced from boutique farmers and specialty fishermen. This is the fifth time the Oahu favorite has been picked for our Top 40.
