Dining room at BLT Steak, New York, NYQuestion: What is more French than a bistro and more American than a steakhouse? Response: Laurent Tourondel. Being as French as it gets does not preclude him from running, with no apparent contradiction, an all-American (at least in name) steakhouse. How come? Laurent is a seasoned chef who honed his skills in the most prestigious houses from Paris to Moscow via New York. The story goes that Laurent was traveling the pampas of Argentina eating a cutlet from a lamb fed with saline herbs and found it so exquisite that he was immediately inspired. Voila---the genesis of BLT Steak. Meats are carefully chosen and sometimes exceptional, like the rare Kobe beef. On ebony tables set along chocolate brown walls, there's a little bit of everything for moderate carnivores, including a grilled tuna or a sautéed Dover sole. Appetizers are straightforward and include shrimp cocktail, crab and even a complete seafood platter. But the core of the action will be sought among twelve meat dishes that will be cooked, of course, to your liking. You name it: steaks, ribs, filet, rack of lamb, duck and chicken---twelve options altogether. Potato sides come in whatever preparation you wish, at least in six ways with eleven sauces, from béarnaise to soy-citrus. BLT Steak boasts an unusual and very extensive wine list with 600 offerings totaling 10,000 bottles. 17 wines are presented by the glass, all managed by sommelier Fred Dexheimer.
