In this provincial inn, Francis and Laurence Borel know how to keep a loyal clientele of contented gourmands who tuck in joyfully to such spirited, full-bodied dishes as hot foie gras with gingerbread, roasted giant scampi with a vegetable salsa, stuffed pigeon and French peas, and chocolate profiteroles. The hunting season brings game. To toast these delights, there is a splendiferous cellar with some 50,000 bottles and some awesome cigars. The set-price luncheon is a feast.
