Chef Ben Pollinger chooses pristine ingredients from the sea that are so fresh, you’ll swear the room is slowly rocking back and forth. Menu items include complex taro-wrapped pompano (accompanied by a savory coconut-cilantro curry) and crispy arctic char with buckwheat spätzle and melted leeks, wading in a lingonberry-caraway jus.
