Stone Brewing Company lays claim to producing big bold ales that push the limits of the human palate for huge flavors and hop bitterness. This Stone creation's appearance is a light amber with a tan head. The IBU's (international bittering units) log in at 85, just shy of the 100 limit that the human palate is capable of tasting, but it packs a huge punch of malt to back up and balance the bitterness. If you have the patience, this 12 per cent ABV behemoth will mature and evolve with age, as the hop flavor and bitterness will dissipate with time, resulting in an increase of malt sweetness. Also worth sipping is the Stone Old Guardian BELGO, a version of the same beer spiked with Stone's Belgian yeast strain, taking this beer into a totally different direction with the yeast esters dominating the flavor.
