In its 21st year, Charlie Trotter’s famous Chicago dining temple remains as fabulous as ever. Raw food and vegetables have never tasted this good. And for anyone brave enough to attempt re-creating the experience at home (at least the food part, that is), Trotter has authored a mini-library of cookbooks to assist the dedicated gourmand. His three daily dégustation menus prove that he continues to deserve the title of one of the world’s most innovative chefs.
