Inspired by live-fire cooking methods and sharing food with friends, owner John Resnick (Ironside Fish & Oyster, Craft & Commerce) has created Campfire in Carlsbad. Harnessing the power of fire, executive chef Andrew Bachelier uses wood, charcoal, embers and ash to prepare sustainable and local seafood, meats and vegetables. Breakfast Republic in Encinitas is filled with whimsical, playful design, from the giant greenery wall and whisk-shaped light fixtures to the "egg lounge" with tiny fried egg chairs. Dishes include cage-free egg omelets like the indulgent combo of mashed potato, bacon, cheddar and sour cream; chilaquiles; shrimp and grits; and turkey meatloaf hash with spinach and eggs.
