Foret is a bottle-conditioned Saison/Farmhouse Ale from Brasserie Dupont, and is Belgium's only certified organic ale brewed from 100 per cent organically cultivated hops, barley and pure well water. The brewery is well equipped to brew this style, since it's been doing it since 1844. The farmhouse reference refers to the tradition of brewing in a farmhouse, or barn, where open air fermentation involves the wild yeast that thrives naturally in the air, resulting in wild aromas and flavors that are impossible to duplicate. Foret has a nose that is a complex blend of coriander, cinnamon and figs, and the taste brings home a spicy malt character with a zesty aftertaste. Typical of a farmhouse ale, its flavor profile includes an earthy, grassy funk and slight sourness that both derive from the natural Belgian yeast. The label is quite colorful and playful, with whimsical images of thriving plants and animals, including the mythological unicorn. This interesting brew will pair well with sharp cheeses, grilled meats and hearty fare.
