 Take a landmark Art Deco building with 35-foot-high windows, terrazzo floors and towering floral designs overlooking Madison Square Park. Add the owners, chef Daniel Humm and general manager Will Guidara. The result is one of New York’s finest dining experiences. Dishes on the menu are indicated only by their principal ingredient, perhaps foie gras, lobster, pork or chocolate. Diners order their courses and then can convey personal preferences, including any dietary limitations. Four-course menus and tasting menus are offered at both lunch and dinner. Expect to also find occasional touches of molecular gastronomy. Wine director Dustin Wilson’s novella-length wine list touches on topnotch selections from around the world.
