2007 Vidal Icewine

From the Niagara Peninsula in Ontario, Canada, the Vidal Icewine is made from grapes harvested at the pinnacle of Canada's crisp winter, when the fruit is naturally frozen on the vine, and picked when the temperature drops to negative ten degrees Celsius. Only a few drops of nectar can be squeezed from each bunch, which is then guided through fermentation to achieve the rich and alluring specialty wine known as Icewine. This particular vintage offers an alluring flavor profile of fresh nectarine, papaya, lychee, tangerine and orange blossoms. The various tastes of fruit, combined with a lively acidity, offer sweet and tart layers of flavor. This sweet wine (served well-chilled) is an obvious match for fruit-based desserts, but it also pairs well with foie gras (pan-seared or terrine) and Asian cuisine. We also like this dessert wine served with a cheese plate of Gorgonzola, Roquefort, Gruyere and Morbier.
