Red Apron, a whole animal butchery and small batch producer of handmade charcuterie, will open at 709 D St. NW, in downtown DC in fall 2012. Chef Nathan Anda, who will lead this shop, will offer about 80 different products, all made with meats sourced from local farmers. The shop's pantry will include raw cuts, roasts, traditional and original salumi, pâtés, smoked meats, sausages and hot dogs, and provisions such as sauces and stocks. Fujimar restaurant, the brainchild of hospitality maven Masoud Aboughaddareh, has opened on K Street. A sister to Lima, Fujimar is situated in the upstairs space, offering an array of Asian-Latino dishes prepared by Cuban-born chef Raynold Mendizabal. The menu will display the culinary interconnections of how Asian immigrants to Latin American influenced Latino cooking. The wine list features imports produced by artisan winemakers, ranging from the Austrian Grüner Veltliner and German Rieslings to Cru Beaujolais and Priorat. Cuba Libre Chef Organizes Cuba Trip
From Friday, April 20, through Tuesday, April 24, chef-partner Guillermo Pernot of Penn Quarter's Cuba Libre Restaurant & Rum Bar is hosting a small group of travelers to get a rare look at the island country. The group will depart from Miami for this five-day tour of Havana. The tour is open to the public. Cost is $4,000 per person for double occupancy; $4,500 for single occupancy. This includes round-trip airfare to Cuba; hotel accommodations; all meals; each day's guided activities; U.S. Treasury Department License and Letter of Authorization from Insight Cuba; an English-speaking Cuban tour guide; all entrance fees for scheduled activities; all Cuban ground transportation, transfers and taxi fares to restaurants; and more. Jackson 20 and The Grille at Morrison House have hired a new executive chef, Brian McPherson. A native of Pittsburgh, McPherson has cooked in many DC restaurants, including New Heights, Butterfield 9, David*Greggory and Poste Moderne Brasserie.
