Opening this summer, the Neighborhood Restaurant Group's Columbia Firehouse will revive Old Town's historic fire station. The 80-seat upstairs dining room will be a classic chophouse with most of the restaurant's meats and all of its charcuterie by Red Apron, the company's affiliated charcuterie. All of the meats at Columbia Firehouse will be sourced from pure breeds at carefully selected farms. Most cuts will come from local Virginia and Maryland farms that practice responsible farming methods. Red Apron's charcuterie and sausages will include updated classics such as steak tartare with pickled mushrooms, caramelized onion aïoli and spicy cheddar "chz-its"; and steamed mussels with Dijon mustard, smoked bacon and cornbread croutons. The 120-seat dining room downstairs will offer a casual menu with a focus on modern American comfort food, small plates and sandwiches. Columbia Firehouse, 109 S.
