Not every top chef can become an accomplished restaurateur with a worldwide audience, but Michael Mina has made the shift without harming his flagship restaurant. Chef de cuisine Chris L'Hommedieu executes his busy boss' vision of playful presentations and signature trio-style preparations of a single protein. While prix-fixe and tasting menus are on display in the genteel dining room, a more affordable but just as whimsical lounge menu, featuring dishes like black truffle popcorn, is also available.
