A Mano has been whispered about for months, as the corner Warehouse/Arts district location was artfully recreated into a brand new dining experience. Chef Adolfo Garcia, chef/ower of Rio Mar, the venerable seafood house, is bringing central and southern Italian cooking to New Orleans. The menu begins with nearly a dozen tempting antipasti (small plate) options, like the Supli ai Telefono (rice croquettes stuffed with caciocavalla cheese), or the Insalata di Mare (salad of octopus, shrimp, squid, celery and potatoes). Rich, long-simmered flavors are abundantly present in the Coniglio della Casa (slow-cooked rabbit with oil-cured olives, roasted garlic and thyme), as well as the Coda alla Vaccinara (“butcher’s-style” braised beef oxtail). Garcia's dishes are ripe with the freshest produce carefully sourced through the Crescent City Farmers Market, Gulf fish, shrimp, and more. Pre-dessert options include Italian cheeses, some served with local honey. Traditional Italian desserts include chocolate and pistachio semifreddo, and Cassata Siciliana. Dinner Mon.-Sat. "Culinary Canines" Calendar Features Local Chefs and their Pets
If there are two things New Orleanians cannot resist, they are food and animals. Now, Southern Animal Foundation, the New Orleans non-profit, low-coast veterinary clinic is launching its first calendar, “Culinary Canines,” as a fundraising effort. The full-color calendar features local top chefs with their canine companions, a recipe created by each chef and a suggested wine pairing. The calendar sells for $15, and 100% of the money raised will be donated to SAF to support their Spay Nola program. Calendars are sold at Southern Animal Foundation (1823 Magazine St.); Swirl Wines (3143 Ponce De Leon St.); Partysist (200 Metairie Rd., Ste, 100); and Cork and Bottle (3700 Orleans Ave. #1C in the American Can Company). Featured chefs include Stephen Stryjewski—Cochon; Chip Flanagan—Ralph’s on the Park; Scott Snodgrass—ONE Restaurant & Lounge; and Brian Landry—Galatoire’s. Featured recipes include shrimp and deviled egg gumbo; filet foie gras with shiitake mushrooms and truffle oil demi glace; and coconut shrimp beignets with pepper jelly sauce.
 
ONE Restaurant and Lounge Introduces New Menu
Chef Scott Snodgrass of ONE Restaurant & Lounge updates and enhances his menu more often than most, and every time it is a winner. The chef and partner Lee McCoullough debuted their new fall menu, and back by popular demand are the char-grilled oysters with blue cheese and red wine vinaigrette. Also featured this season is herb gnocchi and escargot with wild mushrooms bordelaise. And those are just appetizers! The main dish selections now include the chef's coq au vin with smoked bacon and grilled chicken sausage, as well as a stellar spicy spaghetti Fra Diavolo with shrimp and chorizo. There is nothing tame about Snodgrass's cooking, but seasonings are always on the mark. ONE is now open for lunch four days a week. Chef Shuffle

Chef Matt Murphy, who fought a protracted start-and-stop battle with a life-threatening infection, is back on his feet and back at his post as executive chef at The Ritz-Carlton, New Orleans hotel. Murphy and his crew have also unveiled a new concept and menu at Melange, the hotel's fine dining room. Gone is the original menu that offered a taste of signature items from famous New Olreans rstaurants. In its place, Murphy has introduced an all-American menu featuring such items as a lobster mac and cheese appetizer, and entrees such as an herb-crusted rack of Colorado lamb, and seared Maine scallops with a black truffle emulsion. And do not even think of escaping with out a taste of the sweet potato praline torte with brown butter ice cream.
