Cowboy Star opened in downtown San Diego's East Village with a restaurant, bar and adjoining butcher shop. Chef Victor Jimenez serves contemporary American cuisine with a Western flair and his menu includes Painted Hills Farm and Meyer Natural Beef hand-cut steaks; slow-braised rabbit leg with house cured pancetta-verjus emulsion, carrot risotto and red radish; and pan roasted halibut with asparagus, sunchoke puree, fingerling potato and mustard beurre blanc. The bar at Cowboy Star offers large leather booths, a fireplace and hand-crafted cocktails. Chef Roy Yamaguchi launched Roy's at the San Diego Marriott Hotel & Marina in downtown San Diego. Based on the flavors of Hawaii, Yamaguchi's menu features local ingredients, European sauces, Asian spices and a focus on fresh seafood. Signature dishes include hibachi-grilled Atlantic salmon, Szechwan-spiced BBQ baby back pork ribs and Roy's  blackened island ahi. Roy's, 333 W. Dine in the Dark
The Opaque: Dining in the Dark experience is now available at the W San Diego. Opaque seats guests in a pitch-black dining room where they enjoy a multi-sensual culinary experience. The three-course meal includes dishes like spice-crusted New York strip steak with Pinot Noir demi glace and spring vegetable en croute with tomato concasse. The meal is served by trained blind servers from the San Diego Center for the Blind who guide guests through every dish.
