Chef Shuffle

Newcomer Ryan Grant has arrived on the Old World fine-dining scene at El Bizcocho with a burst of energy and creativity. He carries an impressive culinary card, with training under Jean-Georges Vongerichten and Alain Ducasse, and hails from a recent stint at Elizabeth in Manhattan. We are excited to see him shake things up a little with over-the-top concoctions like his signature drink, Absinthe Minded Professor cocktail, made tableside. Grant is favoring global favors with a foundation in French technique, and has modernized some classic dishes with his own personal twist. After a short stint at the Solana Beach fine-dining spot Blanca, chef Jason Neroni tossed in his towel, frustrated with the San Diego palate, and headed back to New York City. While his departure is a loss for North County as we loved his buffalo meatballs over celery root puree and drizzled in a port cherry reduction, we have high hopes for newcomer Gavin Schmidt. Schmidt, who hails from San Francisco, has a jazzy culinary resume, having served as executive chef at the Campton Place Restaurant, and as chef de cuisine at Coi. Blanca, 437 S. Roseville's Amy DiBase has departed from Point Loma's neighborhood brasserie. Her sous chef Chad White has taken over the reins at Roseville shifting the menu into a more affordable price point, while continuing to serve up French bistro fare with a healthy Mediterranean twist. DiBase has headed to The Glass Door in the Porto Vista Hotel in Little Italy, which favors Euro-Cal cuisine with seasonal healthy ingredients.
