Orchids Debuts New Lunch and Dinner Menus
Don't fret---the beloved coconut cake is not gone from the menu. But it was one of only three dishes to survive the complete overhaul of Orchid's lunch and dinner menus. Executive chef Vikram Garg, in concert with chef de cuisine Darryl Fujita, has crafted what can best be described as a "Hawaii-centric" menu for Orchids. The focus is on seafood, from the Big Island abalone with a delicate corn bisque and cumin to a seafood feast for two featuring island-sourced Kona lobster, onaga and Kahuku shrimp steamed with kaffir lime leaves and with an intriguing trio of aïolis---saffron-garlic, harissa and miso. Hearty appetites will appreciate the opah and pork with togarashi (Japanese seven-spice), stir-fry beans and Kabayaki-glazed Kurobuta pork. Five Courses from The Island Bistro Cookbook
Chai Chaowasaree, chef-owner of Chai's Island Bistro, recently published his cookbook, The Island Bistro Cookbook. He is showcasing dishes from the book in a special five-course menu ($60) that will be available until the end of the year. Reservations are always recommended for this restaurant which is also noted for its line-up of live entertainment. Call 808-585-0011 for reservations and information. Chef Shuffles

Shoji Namatame, who recently served as executive chef for both the Villa del Mar and Hacienda resorts in Cabo San Lucas, has been named the executive chef for the Waikiki luxury hotel and condo bearing the famous Trump name. Namatame has worked extensively in Hawaii including the Kapalua Resort on Maui and the Sheraton Kauai Resort.
