Chef Mark Vann's Tokyo-born Fujimamas got off to a rocky start at its first Hawaii location in Kailua-Kona, but quickly regrouped and has opened in a new home in the cool climes of Waimea. Vann describes the food as "global, with an Asian twist," and the menu shows Vann's American Southwest roots blending with North and Southeast Asian influences. Witness the tostado of deep-fried oysters accompanied by a seasonal salad with ranch dressing or the kombu-cured duck with honey-Mandarin mojo. Dinner Mon.-Sat. Chef Mavro Chef Mavro Introduces New Summer Menu
Never resting upon his laurels, George Mavrothalassitis of Chef Mavro debuts a new menu for the summer season. Consider the cheese course---featuring Honokaa fresh goat cheese in a delicate mousse flavored with lemon zest and chives, served with kumquats, and red and yellow beets. Paired with a Vouvray Domaine Huet "Le Mont Sec," bright with green apple, pear and tea aroma, the dish demonstrates once again why Chef Mavro is a must-go for anyone who treasures fine cuisine. Jazz & Wine at 'Elua

Chef Hiroshi Fukui creates a new menu each month featuring the finest locally grown seasonal ingredients available.
