Openings

The Signature Prime Steak & Seafood has opened at the top of the Ala Moana Hotel, in the space previously known as Aaron's, Nicholas Nickolas, and The Summit. This is the first fine dining venue for restaurateur Peter Kim, who owns casual and fast-food dining establishments around Hawaii, including Liliha Bakery, Yummy Korean Barbecue, and Lahaina Chicken Co. The restaurant will specialize in quality steaks as well as fresh seafood from around the state. There's also lobster mac ‘n' cheese, bone-in rib-eye, miso butterfish and ahi poke, but most people will be eating at Signature Prime for the 360-degree view of the ocean, mountain and city. New Menu Items at Imari
Imari, the Japanese restaurant at the Hilton Waikoloa Village, has added new menu items, including seafood udon soup with tempura lobster tail and grilled scallops; and a four-colored seaweed salad. Indigo Reopens After Three-Month Hiatus
Indigo in Honolulu's Chinatown has reopened after a fire closed it for three months. The future of the restaurant was uncertain after the fire, but owner/chef Glenn Chu refurbished the furniture and art, and revamped the menu under the direction of chef Robert McGee, formerly of the Whole Ox Deli. The lunch buffet and bar favorites will remain on the menu, like the lamb siu mai, goat cheese wontons and shrimp lumpia. The lunch and dinner entrées, however, will be evolving over the next few months in the same philosophy of Eurasian cuisine but with new, contemporary twists. Chef Shuffles

The Hyatt Regency Waikiki Beach Resort & Spa has announced the appointment of three new chefs de cuisine, two of which are well-known in Hawaii's culinary scene. Local celebrity chef Jon Matsubara, who opened Azure in the The Royal Hawaiian, A Luxury Collection Resort, Waikiki, and Stage in the Honolulu Design Center, will now take the reins at Japengo. Matsubara was also previously the chef de cuisine of the CanoeHouse restaurant on Kohala, Hawaii. Dean Matsushita, a longtime chef with the Oahu Country Club, will oversee terrace and Regency Ballroom functions and will direct the culinary team as the hotel opens the new Kou Ballroom, scheduled for September 2013. Jake Andrews will head the Shor restaurant team. Andrews has worked at some of the company's more distinguished properties, including the Hyatt Regency New Orleans, Hyatt Regency Lost Pines Resort and Spa and Hyatt Santa Barbara. Mai Tai Lounge has closed its doors. The Mai Tai Lounge, an ocean-side hangout on Lahaina's Front Street, has shuttered. The restaurant featured pupus, salads, sushi and seafood, as well as a great selection of tropical drinks and an open-air patio with striking views of Lana'i.
