Stephan Pyles opened Stampede 66 in the Park Seventeen building in Dallas at the end of October. The restaurant features "Modern Texas" cuisine, featuring familiar dishes with a twist. Signature dishes include smoked chicken and sweet potato dumplings; pork barbacoa with clay pot black beans; sous vide honey friend chicken; and desserts like Pyles' Mother Eulene's Buttermilk Pie, served here with nitro-shattered Texas grapefruit. Cook Hall has opened the W Dallas Victory hotel Cook Hall has opened at the W Dallas-Victory hotel, replacing Tom Colicchio's Craft Dallas, which closed in mid-September. This "global gastropub" offers dishes such as spicy paprika shrimp with lemon; Welsh rarebit with fried egg sandwich; and crispy duck tacos with chipotle coleslaw.
