• The Proper Eats Food Hall by Clique Hospitality is now open at Aria Resort & Casino. Situated on the second-level promenade in the space where the Buffet at Aria was previously located, the 24,000-square-feet food hall is home to nine new restaurants offering global cuisine. Eateries include:
- Wexler’s Deli from Los Angeles with old-school Jewish deli classics;
Judy Joo’s Seoul Bird from London serving Korean street food;
New York’s Egghead with egg-centric sandwiches;
Pizzaoki, DJ Steve Aoki’s take on NY-style pizza;
- Portland’s Shalom Y’all with Mediterranean dishes like shawarma spiced cauliflower and hummus;
- handroll sushi spot Temaki Bar;
Laughing Buddha, specializing in ramen noodles and broth;
- diner-style Lola’s Burgers;

• Chef Michael Mina’s StripSteak at Mandalay Bay Resort & Casino reopens on December 30, 2022, just in time to ring in the new year. The steakhouse had been closed since October while the interior space was refreshed with décor to reflect the surrounding Mojave Desert landscape and an expansive new private dining room was added. While the menu still includes several favorite selections from its classic menu, a variety of new dishes and a specialty cocktail program have been added. The Knight Time Hockey Bar is now open at the M Resort Spa Casino, located on the casino floor adjacent to the sports book. The restaurant and bar is partnered with the Henderson Silver Knights hockey team and the décor includes a floor comprised of hockey stick designs, tabletops inlaid with a hockey rink, a hockey-inspired white wall wrap simulating a hockey rink and signed memorabilia from the team. • The Scotland-based BrewDog has opened its first Vegas location on the third and fourth floors of the Showcase Mall on The Strip. The beer brand with more than 120 locations worldwide claims this is its largest venue to date and the space spans 30,000 sq. ft. with capacity for 1,300. Gordon Ramsay has opened his 6th restaurant on the Las Vegas Strip: Ramsay’s Kitchen. The 240-seat restaurant, located within Harrah’s in the former Oyster Bar space, is comprised of a seven-seat seafood counter, a private booth and a private dining room. The menu is meant to replicate what it’s like to dine with Ramsay at his home while taking guests on a culinary journey around the world. Highlights include onion soup with oxtail, gruyère gratinée and baguette; mac & cheese with gouda and cheddar mornay sauce and herbed breadcrumbs; beef carpaccio with horseradish panna cotta, cured egg yolk, parmigiano-reggiano cheese, artichoke chips and fried capers; butternut squash risotto with herbed crème fraîche, toasted hazelnuts and sage brown butter; pan-seared scallops with house-cured pork belly, apricot purée, pomegranate, orange and chicken jus; and Ramsay’s signature beef Wellington and sticky toffee pudding. Park on Fremont Closed for Renovations
Corner Bar Management’s garden bar and restaurant Park on Fremont, located in the Fremont East Entertainment District at the corner of East Fremont and Las Vegas Boulevard, has closed for renovations. Known for its patio space, it will return in the spring with a larger, lusher 2,200-square-foot patio overflowing with flora and fauna. There will also be larger tables allowing for more seating that can accommodate groups and community dining experiences. The menus will also be refreshed, focusing on elevated hamburgers, sandwiches and flavor-rich comfort foods including chicken wings. To accompany the new dishes, the restaurant and bar will host a curation of live entertainment centered on alternative, pop rock, Indie pop and the classics in the space between its new front and back patio, with a lineup of bands, performers and DJs. El Luchador Mexican Kitchen + Cantina Introduces Several Winter Menu Items
El Luchador Mexican Kitchen + Cantina has introduced several new menu items by chef Lorena Telles, just in time for the winter season. Included are birria quesadilla with marinated beef, cilantro-onions and served with birria consome; chile relleno—two poblano peppers with tomato salsa, crema and melted cheese; chorizo meatballs with citrus tomato sauce, talera bread and cheese; green chili carnitas burrito with ranchero beans, carnitas, pickled onion and cheese; tacos de cameron with mango slaw, tempura shrimp and avocado puree; loaded papas fritas topped with queso, pico de gallo, jalapenos and crema; and Milanese de Puerco—breaded pork chop with roasted squash, onions and chile morita sauce. There are two locations: one in Mountain's Edge and one in Henderson. Hearthstone Kitchen & Cellar Offering Hanukkah Menu
Hearthstone Kitchen & Cellar at Red Rock Casino Resort & Spa will celebrate Hanukkah with a menu offering traditional dishes. Offered Sunday, Dec. 18-Monday, Dec. 26, dishes include homemade challah bread served with honey butter; traditional potato latkes with smoked salmon, capers, dill crème fraiche and shallot; juicy and tender beef brisket complemented by a red wine demi glaze sauce and served with glazed rainbow carrots, pearl onions and sweet potato; and chocolate babka bread pudding with French vanilla ice cream topped with kosher chocolate caramel sauce and fresh mint. Todd English's Olives Offering Happy Hour Under $10
Chef Todd English’s Olives at Virgin Hotels is offering a happy hour Wed.-Sun. from 5-7 p.m. with food and drink specials all priced under $10. Bites include mixed olives with orange and fennel ($5); truffled arancini with black truffle risotto, garlic aioli and mozzarella ($7); veal & pork meatballs with Sunday gravy and herb ricotta ($9), pull apart bread with fig jam, gorgonzola dolce and prosciutto ($9); truffle parm fries with aged parmesan, herbs and garlic aioli ($6); and spaghetti frittelli with mortadella, peas and marinara ($8).
