Wahlburgers, the family burger restaurant of chef Paul Wahlberg and brothers Mark and Donnie Wahlberg, has opened a second Las Vegas Strip location, within The Shoppes at Mandalay Place at Mandalay Bay. The centerpiece of the menu inspired by the family’s recipes is chef Paul’s signature burgers, including the “Our Burger” made with a 1/3-pound beef burger patty, “government cheese” (a tongue-in-cheek name for their premium American cheese), lettuce, tomato, onion, pickles and Paul’s Wahl Sauce; “The O.F.D.” (stands for Originally From Dorchestah) stacked with two burger patties, Swiss cheese, bacon, sauteed mushrooms and tomato jam; and plant-based Impossible burger with smoked cheddar, lettuce, caramelized onions, housemade chili spiced tomatoes and Wahl Sauce. Other menu selections include salads, sandwiches, BBQ chicken tater tots, shakes and root beer floats. • Specials at Trustworthy Brewing Company
Trustworthy Brewing Company, located at the Grand Canal Shoppes at The Venetian, is offering several specials during the month of May and beyond. On May 14, Mother’s Day, all moms will receive a free entrée with purchase of another entrée from 10 a.m. to 9 p.m. The NHL Playoffs special, available now through the end of the National Hockey League playoffs, offers buy one, get one draft beers for diners who are wearing NHL gear from any team. The MLB Season Special runs through the end of the Major League Baseball season, and is a $19 lunch special, which includes any burger and a draft beer, during all MLB games. • Esther’s Kitchen Introduces New Menu Items and Cocktails
Esther’s Kitchen has unveiled new seasonal dishes and cocktails. New dishes include celery root & truffle agnolotti with red wine braised oxtail, celery and chives; rigatoni with black kale almond pesto and toasted almond breadcrumb; prosciutto + fig sourdough pizza with panna, mozzarella, gorgonzola, arugula and spicy honey; and Treviso salad with blood orange, charred date, artichoke and ricotta salata. New cocktails include She’s So Jalisco with tequila, kiwi, shiso, lime and demerara; Rosemary’s Baby with gin, Campari, Carpano Antica, smoked rosemary, lemon and egg; and Cello There with house-made limoncello, yuzu, seasonal citrus and triple sec. • Carversteak Debuts Spring Menu Items
Carversteak at Resorts World has ushered in spring with several new menu items. New starters include roasted bone marrow with salsa bacon onion jam, herb salad and parsley lime gremolata ($28); and roasted beets with Applewood-smoked bacon, beer battered onion ring, soft boiled egg and Point Reyes blue cheese ($22). New raw bar offerings are Alaskan King crab with yuzu chili butter and lemon (MP); and scallop crudo with Serrano pepper, pickled cucumber and coconut lime vinaigrette ($22). Entrees include Hudson Valley duck breast with maraschino cherry, spring onion & peas red wine jus ($56); and Midwestern 21-day wet-aged 20 oz bone-in ribeye ($84). • La Mona Rosa Introduces New Happy Hour
La Mona Rosa at 6th and Fremont has launched a happy hour, offered in its bar area Fri.-Sun. from 3-5 p.m. Food specials include house fried corn chips, guacamole and morita chili roasted salsa with jalapeno for $6; jicama ceviche tostada with jicama, cucumber, cilantro, onion with guajillo dressing and salsa macha for $3; and taco de carnitas (citrus braised pork shoulder topped with chicharron salsa verde cruda and pico de gallo) or taco de pollo a la parilla (grilled chicken thigh, avocado, green onion and salsa verde tomatillo) for $3. Drink deals are select cocktails for $11 including Cerveza-rita with choice of beer, lime, agave and salt; Batanga with tequila, charanda, cola and lime; and Ranch Water with tequila, lime, topo chico, rose and salt. • Absinthe Opens New Food and Beverage Options
Absinthe, the circus, comedy and burlesque show at Caesars Palace, toasted to its 12th anniversary with the unveiling of the Green Fairy Garden. Open one hour before and after each performance, the outdoor cocktail terrace surrounding the venue contains a burger stand and bars set in shipping containers. The burger stand offers three items: the No Pants Burger—two short-rib blend patties, grilled onions, American cheese, dill pickles and a secret sauce served on a brioche bun; the vegan No Burger Burger—nearly identical, but with an Impossible Burger and vegan cheese; and crunchy star-shaped No Pants Star Tots. The Pier 17 Yacht Club,named for the show’s original incarnation on the East River by the Brooklyn Bridge, is a hidden speakeasy bar with a special menu with cocktails including the Gazerac with rye, cognac, Peychauds and Absinthe; and the Tantric with mezcal, aloe, lime, cucumber and wormwood. • Balla Italian Soul Offering Tasting Menu
Chef Shawn McClain’s Balla Italian Soul at the SAHARA is now open for dinner seven nights a week and is also now offering a family style tasting menu. Priced at $75 per person, the menu includes antipasti of housemade focaccia and taralli crackers, burrata with roasted peppers and tomato conserva, Caesar salad with anchovies and marinated Octopus with Calabrian pepper and white beans; housemade pastas with rigatoni with red pepper and scampi and Casarecce with seasonal tomatoes and Calabrian pepper; woodfired entrees of sea bream with Sicilian olive and capers and veal Milanese with shaved turnips and wild greens (and an optional add-on for the table of Piedmontese flatiron steak with bone marrow gremolata for an additional $42); chef’s selection of contorni (sides); and dolce of gelato with pistachio and Luxardo cherry or Nutella crunch.
