Anima, the newest restaurant from the EDO Hospitality Group, is now open in The Gramercy in southwest Las Vegas near Russell and the 215 freeway. The décor features hues of chocolate, burgundy and pewter; a charcuterie and raw bar; an open kitchen; and murals of marine life decorating the walls. EDO chef/partner Oscar Amador and longtime Las Vegas chef Francesco Di Caudo, are collaborating to include each chef’s experiences from Spain, Italy and beyond. The menu includes Peruvian scallops crudo with persimmon salpicon; Catalan suquet—traditional Catalan stew with clams, tomato broth and nut picada; pappardelle cinghiale with wild boar ragu; and arroz a la cazuela with duck confit, foie gras and black trumpet mushrooms. Each dish is served to share at the table, and in addition to the a la carte options are seasonal chefs and vegan tasting menus. Anima is open for dinner Thu.-Tue., with lunch service coming soon. From the team behind Firefly Tapas Kitchen & Bar and Tacos & Beer, John and Tabitha Simmons, along with partner Amelia Cooper, comes a new plant-based concept called Graze Kitchen. Located at Buffalo & Warm Springs in the Southwest, the 26-seat eatery is designed in boho-chic style with modern minimalist flair to include ombre metallic globe lighting, curated drought-tolerant plant life and a hand-painted mural by local artist Deb Amossa. The menu is designed to appeal to vegans and non-vegans alike with Korean BBQ nachos with cashew queso, gojuchang aioli, cilantro and scallions; mushroom shawarma pita with coconut yogurt tzatziki; sweet potato bisque with smoked tempeh and coconut cream; and Brussels sprout salad with chewy dates, smoked almonds and maple-mustard dressing. When Graze opens for breakfast in mid-January, breakfast items will include fried maple-cinnamon oatmeal, breakfast burritos and spinach Florentine benedict. Milano Restaurant and Bar is open in Town Square. The Italian eatery is named for Milan, the city where Italy-born co-owner Laura Migliorini developed her food and beverage/hospitality industry career. She is joined by Laura Trent, an American Italian singer songwriter who also spent several years living in Italy. Situated across from Blue Martini, floor to ceiling windows offer a view of Town Square from its second floor perch, lights set in mini wine barrels allude to the wine list offering several varietals by the glass or bottle and on display in the kitchen is a pizza oven capable of cooking pies at 800°. Highlights of the menu include oven-baked cavatelli al frutti di mare with mussels, scallops, shrimp, squid and clams covered with pizza crust; risotto creamed with black garlic and scallops; Genova pizza with fresh mozzarella, arugula, pesto and ricotta; and desserts such as cannoli, tiramisu and gelato. Nellie’s Southern Kitchen, a Jonas Family experience, will make its Las Vegas debut at MGM Grand in The District opposite the MGM Grand Garden Arena in early 2022. Helmed by Denise and Kevin Jonas, Sr., their famous sons Kevin II, Joe and Nick (the Jonas Brothers) and Franklin, the 11,000-square-foot-restaurant is named for and will pay homage to Kevin Jonas Sr.’s grandmother, Nellie, who lived in Belmont, N.C. until she passed in 2011. The restaurant design will be modern and elegant with a folkloric texture with whimsical nods to Nellie and the Jonas family’s passion for music and hospitality. The menu will celebrate the comfort food, hospitality and Southern charm of the family’s 1760s North Carolina roots with Southern favorites such as warm biscuits, Hawg Hill smoked pulled pork sandwich, chicken and gravy, Southern meatloaf, and chicken and waffles with cinnamon-honey butter. Carversteak opened on December 30, 2021, at Resorts World Las Vegas. A reimagining of the classic steakhouse experience, a modern environment features a 70-foot quartzite stone bar, rotating digital and traditional art pieces and a sweeping terrace with outdoor bar and lounge gardens overlooking the Las Vegas Strip. The kitchen is helmed by executive chef Daniel Ontiveros, whose previous positions included Joël Robuchon, Michael Mina’s Nobhill Tavern and Scotch 80 Prime. Oliveros’ menu includes starters such as “steak and egg”—steak tartare with quail egg and whipped horseradish; Russian Osetra, Golden Kaluga and Hybrid caviar; shellfish and raw bar with lobster, oysters, clams, Gulf shrimp, PEI mussels and sashimi; Japanese A5, Australian and Snake River Farms wagyu, bison filet, bone in ribeye and striploin; and sides such as crispy bourbon brussels sprouts and beer-battered onion rings with smoked chipotle aioli. Amalfi by Bobby Flay Introduces New Vegetarian Menu Items
Amalfi by Bobby Flay at Caesars Palace has introduced several new vegetarian dishes. The new menu includes burrata & persimmons with pignoli, pumpkin seeds, cinnamon and balsamico; butternut squash agnolotti with butternut squash, shiitake mushroom, brown butter and sage; gnocchi al forno with salsa rosa and fontina Parmigiano Reggiano; white bean risotto with broccoli rabe and tomato confit; charred long beans with Calabrian chile and pecorino Marcona almonds; roasted Romanesco with hazelnut gremolata, romesco saffron and pickled fennel; and cremini mushroom polenta with mascarpone, Parmigiano and white truffle oil. Holsteins Updates Menu with New Items
Holsteins Shakes & Buns at The Cosmopolitan has introduced a new menu with some new items. Included are firecracker chicken meatballs spiced with Buffalo brown sugar and sambal; Caesar-style Brussels sprouts dressed with Caesar dressing and parmesan; roasted cheese curds served with tomato aioli; braised short rib burger topped with provolone and onion rings; and turkey burger with feta, tzatziki sauce, tomato, onion and pickles. Remaining on the menu are the popular grass-fed beef burgers (including the billionaire burger topped with foie gras, marmalade onions, frisée, arugula and truffle aioli). China Poblano Introduces New Takeout Menu
China Poblano, chef José Andrés' Chinese and Mexican concept at The Cosmopolitan, has introduced a new takeout menu with several to-go specials. Three takeout feasts for two priced at $45 include “Noodles & Tacos” with dan dan mian (wheat noodles with Szechuan ground pork sauce, toasted peanuts, cilantro, chile pequin and Chinkiang vinegar), ants climbing a tree (spicy wok-tossed glass noodles with bok choy, chicken, pea shoots and toasted sesame seeds), two pollo tacos and two carnitas tacos; “Chinese” with when pigs fly (steamed buns, Chinese barbecue pork), fried wontons, vegetable fried rice (with mushrooms, egg and twenty seasonal vegetables) and wok-roasted vegetable; and “Mexican” with choice of six carnitas or pollo tacos, arroz perfecto (Spanish rice), frijoles con crema y queso and chips and salsa. In addition, available on Tuesday and Wednesday from 2-5 p.m., the Take-out Tacos Especial offers five carnitas tacos with braised pork, onions, cilantro and salsa verde cruda for $15. The Stove LV has announced the appointment of John Baez as the new head of operations/executive chef. Originally from Austin, Texas, Baez began his career working in the kitchens of celebrated Roy Yamaguchi after graduating from the Texas Culinary Academy’s Le Cordon Bleu program in 2004. During the seven years spent working for Chef Yamaguchi, he was selected to travel to numerous Roy locations around the country and worked amongst the most talented and accomplished chefs in the company. The next seven years of Baez’s career were spent at Tommy Bahama where he led a revamp of the corporate training menu while based in their Las Vegas and Newport Beach locations. This was followed by a stint with the Landry’s Specialty Restaurant Division as well as a few local ventures.
