Openings

Once is now open in the space formerly occupied by Table 10 Once is now open in the space formerly occupied by Table 10 in the Grand Canal Shoppes at The Venetian/Palazzo. Pronounced “on-sey,” the name is Spanish for the number 11, representing Peruvian-born chef Ricardo Zarate’s spot in his line of 13 siblings. Zarate designed the décor to mimic his home country, with floor-to-ceiling living plant walls, a patio with five communal tables and live plants throughout the venue. Zarate’s menu introduces the Peruvian Nikkei dining experience, blending the flavors of Peru and Japan, with 11 sharable dishes inspired by his childhood, with items rotating weekly, such as shrimp and scallop dumplings, red snapper ceviche, braised duck leg, oxtail bibimbap and kampachi and calamari. In keeping with the numeric theme, 11 cocktails are offered, including V.I. Beet containing rye, Carpano Antica, Pierre Ferrand and bitters garnished with beet jerky and beet dust (dehydrated beets). Once is open daily for dinner from 5 p.m.-midnight. Once, The Palazzo Resort Hotel Casino, Grand Canal Shoppes, 3327 Las Vegas Blvd. S., Las Vegas, NV 89109, 702-607-3797.

Hong Kong-based Lai Sun Group has opened China Tang, the company’s first expansion to the Western Hemisphere, at MGM Grand. Serving Cantonese, Sichuan, Shanghai and Beijing dishes, the expansive menu includes steamed pork xiao long bao dumpling soup filled with broth and pork with a tangy black vinegar sauce; traditional Beijing roasted duck, roasted for more than 24 hours in an imported duck oven; baked hammer chicken stuffed with mushrooms, pork belly, ginger, shallot and garlic doused in rosé wine and lit ablaze tableside as the server uses a hammer to crack the clay open; and braised Chilean sea bass and roasted pork belly stir-fried together and stewed in double-boiled meat broth with Shaoxing wine, dark soy sauce and oyster sauce.
