Openings

Juno has opened in the posh new Arctic Club Hotel in downtown's historic Arctic Building where chef de cuisine Alex Nemeth from the Purple Café & Wine Bar mans the kitchen. Offering seasonally inspired menus that change depending on the time of day, executive chef Thomas Kollasch, formerly with the Barking Frog and Alderwood Resort, is redefining hotel fare for this informal yet chic restaurant. Enjoy classic breakfasts with a twist such as cappuccino pound cake French toast, or exotic tasting menus that showcase lavender-seared bay scallops. There's also a delectable selection of late-night dessert bites, such as an elegant lemongrass and Bay leaf infused crème brûlée. Juno, 700 3rd Ave., Seattle, WA 98104, no phone available yet.
 
Also in Belltown, Spur has opened in the space vacated by Mistral. Expect small, shareable plates of eclectic American-inspired food from co-chefs Brian McCracken and Dana Tough. Part of the new "gastropub" trend (a bar with good food), Spur is planning vintner dinners and unique signature cocktails. Spur, 113 Blanchard St., Seattle, WA 98121, no phone available yet.
 
Branzino is Belltown's newest culinary hot spot. Located in the former site of En, the new eatery was recently opened by Peter Lamb, and named after a tasty Mediterranean sea bass usually grilled and served whole. The kitchen is under the helm of chef Ashley Merriman, formerly of Tilth and Brasa. Look for homemade pastas and grilled fish from this sleek restaurant's wood-burning stone oven. Dining at The Corson Building
Seattle's newest spin on innovative dining can be found at The Corson Building, which is now serving a multi-course family style dinner for 30 guests at 7 p.m. two or three nights a week (Thursday-Saturday). The brainchild of Matthew Dillon (Sitka & Spruce) and Wylie Bush (owner of Joe Bar), The Corson Building is a cross between a food collective and an experimental studio for food. Guests never know what to expect but are guaranteed a culinary adventure. Dinner averages $80 per person or $110 with wine parings. Located in South Seattle's industrial Georgetown area at 5609 Corson Avenue, the ornate Spanish style structure was built in 1910. When dinner is not being served, the he space will be used for various culinary events, cooking classes, and art openings. Reservations are required and may be made by calling 206-762-3330, or by visiting www.thecorsonbuilding.com Impromptu dinners may be offered, so check the Web site for updates.
 

Chef Shuffle

Cameo McRoberts, former sous chef at Chicago's Frontera Grill, has been named chef of the main Ballard location for Dish D'Lish (5136 Ballard Ave).
