Openings

Brian McCraken and Dana Tough, the innovative chefs behind Spur, Tavern Law and The Coterie Room, will open a new venue focusing on smoked meats, beer, and whiskey. Named the Old Sage, the restaurant will occupy the Capitol Hill space recently vacated by Local Vine. Located just down the street from their speakeasy, Tavern Law, Old Sage will combine traditional Old-World smoking techniques with their trademark contemporary approach to cooking.
 
Croissant lovers rejoice! You'll no longer need to battle traffic or the West Seattle Bridge to enjoy Bakery Nouveau's divine pastries. A second location is expected to open soon in Capitol Hill's East John Court, and will offer cakes, candies, and sandwiches. Shanik, the much-awaited sister to Vij's fusion Indian restaurant in Vancouver, British Columbia, opens this December in South Lake Union. The driving force behind its launch is chef/owner Meeru Dhalwala. Like Vij's, the restaurant will not take reservations, so expect to wait along with other Seattle foodies anxious to taste the notable dishes. Chef Maria Hines Agrodolce, the much-anticipated third restaurant from chef Maria Hines, will open in the former 35th Street Bistro space in Fremont on Friday, December 21. Agrodolce's menu will focus on dishes from Southern Italy with an emphasis on Sicilian cuisine. Like her other restaurants, Tilth and Golden Beetle, the menu will showcase organic certification from Oregon Tilth. Initially open for dinner (with future plans for lunch and brunch), the kitchen will exclusively use local products, excepting those only available from Italy. The Feast of the Seven Fishes on Anchovies & Olives
Ethan Stowell's Anchovies & Olives is planning to celebrate Christmas Eve early this year with a seafood smorgasbord, known as the "The Feast of the Seven Fishes." The traditional fish-centric family-style feast will be served Sunday, December 23rd, from 5 p.m.-10 p.m. and is $75 per person. For reservations (highly recommended), please call 206-838-8080. The Dahlia Bakery Cookbook Discover Tom Douglas' Baking Secrets in The Dahlia Bakery Cookbook
Celebrity chef, Tom Douglas, and his first pastry chef, Shelley Lance, are sharing their baking secrets in the recently released The Dahlia Bakery Cookbook: Sweetness in Seattle. Published by William Morrow, the $35 hard-cover book includes recipes for his famous Triple Coconut Cream Pie, doughnuts with cinnamon sugar, and the Serious Biscuits. Chef Shuffle

Joe Ritchie, who has worked in the kitchens of Poppy and The Herbfarm, is now the new executive sous chef at Ray's Boathouse. Along with the new chef, Ray's will be reopening soon with a new look. George Foley, a third-generation baker from Maine who previously worked at Purple Cafe in Bellevue, has been named the new pastry chef at Salty's on Alki. Chef Shane Ryan is in charge of Matts in the Market Chef Shane Ryan, interim head chef at Matt's in the Market, is now officially in charge of the kitchen at this acclaimed Pike Place Market restaurant. Ryan's credentials include helping to open several restaurants for Ethan Stowell (Tavolata, How To Cook A Wolf, and Staple & Fancy Mercantile) as well as Joël Robuchon's The Mansion in Las Vegas. Il Corvo, the tiny artisan pasta cafe inside Procopio on the Pike Place Market Hill Climb, has announced it's moving to a larger space in Pioneer Square. Chef/owner Mike Eastop served his last lunch (the place was never open for diner) on November 30, and plans to open his new restaurant next month in the space formerly occupied by Built Burger on James Street. The new Il Corvo will be open later but there are still no plans to serve dinner.
