Openings

Maria Hines's, the James Beard award-winning owner/chef at Tilth in Wallingford, has opened a small eatery in Ballard. Named for a Spanish beetle said to have aphrodisiac qualities, the Golden Beetle's menu focuses on Eastern Mediterranean flavors and foods---think hummus and figs, lamb tangine, cous cous, and more. Now open for dinner Tuesday through Sunday, the Golden Beetle, the third restaurant in the United States to qualify for Oregon Tilth certification (Tilth was the second), plans to open for lunch by spring. Golden Beetle, 1744 NW Market St., Seattle, WA 98107, 206 706-2977.

Chef Justin Mevs, the former executive chef of Cutters Bayhouse in Pike Place Market, is planning to open a traditional American diner at First Avenue and Cedar in Belltown. Expect to see The Lucky Diner serving fries, burgers, and other diner favorites sometime this spring.

Seattle's best known chef, Tom Douglas, is giving Seattle yet another restaurant. This one will be a pub in South Lake Union in the yet-to-open Terry Avenue Building project. Called Brave Horse Tavern, the location is in the historic brick building between Thomas and Harrison street on Terry Avenue. Other eateries in the building will include a Tibetian-style dumpling house and an Italian restaurant.

Pritty Boys' Family Pizzeria will be opening in April in the old Dulce's Latin Bistro space at 1430 34th Avenue in the Central District. Expect Dulce's romantic ambiance to be replaced by a family-friendly vibe blended with top-notch pizza.
