Can't decide whether you want sushi or Pad Thai? Now you can have both in one place! The trendy new fusion of sushi and Thai food debuts this month at Pinto Thai Bistro & Sushi Bar. Tom Douglas' latest venture is Seatown Snack Bar just a block north of Pike Place Market, across from Victor Steinbruck Park. In keeping with Douglas' status as one of Seattle's top chefs, the menu breaks the mold for snack bar fare and prices. The counter lunch and dinner menu includes spicy pot-steamed whole crab, lavender honey duck legs, butter-poached duck eggs with Walla Walla onion toasties, county rib roast with tamarind eggplant and coriander yogurt. Early Market shoppers will find breakfast fare---served from 8 a.m.---ranging from buckwheat pancakes with strawberry sauce to an English muffin fried egg with sablefish and cream cheese. Seatown Snack Bar, 2010 Western Ave., Seattle, WA 98121, 206-436-0390.

Chef Ethan Stowell's latest venture, Staple & Fancy Mercantile, is now open in Ballard. The 35-seat restaurant showcases his restrained style of Italian cooking with a focus on clean flavors, stellar products, house-made pastas, and seasonal ingredients. Open nightly for dinner, it offers two menu options: a limited á la carte menu that changes daily, and a four-course chef's "choice" for $40. The good news: unlike Stowell's other restaurants Tavolata and How to Cook a Wolf, Staple & Fancy accepts reservations (as does Anchovies & Olives). For reservations, please call  206-789-1200. Staple & Fancy Mercantile, 4739 Ballard Ave. NW, Seattle, WA 98107, 206-789-1200.

Patrons will be able to watch a team of dumpling-makers prepare their delicious fare through a glassed in kitchen. As the group's first U.S. franchise, Bellevue's Din Tai Fung will seat 220 people.
