RESTAURANT NEWS

Openings

Enrico Bernardo has opened his second Il Vino in Courchevel.  His newest restaurant will maintain the same concept as his Paris location, presenting diners a menu that lists only glasses of wine.  It is up to chef Guillaume Monjuré to decide what dish would best match your selection.  The restaurant also offers a blind tasting menu in which both the wine and food are chosen for you. Dinner nightly. Il Vino, Courchevel 1850, 73120 Saint-Bon Tarentaise, +33 (0)4 79 08 29 62.

Chef Alain Ducasse has chosen the city of Osaka for his latest restaurant, Le Comptoir de Benoit.  After the launch of Beige and Benoit Tokyo in the country's capital, Ducasse's third restaurant will be located on the 33rd floor of The Breeze Tower in the historic Nishi-Umeda district.  The restaurant is a Japanese adaptation of the traditional French bistro, using local ingredients like Kobé beef and Kyoto vegetables to create classically French dishes including "oeuf cocotte," Saint-Jacques scallops, and quenelles de brochet (a mixture of creamed fish, chicken, or meat with a light egg binding). Designed by Shinichiro Ogata, the restaurant unites traditional and contemporary Japanese architecture around the establishment's bar that opens directly into the kitchen.

News Bytes
Alain Ducasse leaves France for Monaco.
Celebrated chef Alain Ducasse is heading to Monaco where he will forfeit his French nationality in exchange for citizenship in Monaco, granted by Prince Albert II.   A reason for his sudden departure has been linked to the fact that Monaco imposes no income or wealth tax on its residents. Although Ducasse could have gone into tax exile in Switzerland and retained his nationality, he, rather, opted to become a Monégasque where he will be close to his three-star restaurant Louis XV. Ducasse's companies in France will still pay corporate taxes, however Ducasse's personal income will not be subjected to the same fate.

Chef Shuffle
Chef Eric Briffard, formerly of Hôtel Plaza Athénée (before Alain Ducasse took over), is due to take the wheel of the ovens at Le Cinq, which was run by the sous chef after the abrupt departure of Philippe Legendre.
