Le Ciel de Paris has reopened after a year-long renovation Le Ciel de Paris has reopened after a year-long renovation. Set on the 56th floor of the Montparnasse Tower with a futuristic décor and a sweeping view of the City of Light, this luxurious brasserie features the cuisine of chef Christophe Marchais. You can sample ingredients such as lobster, scampis and truffle, or sip a drink comfortably seated at the Champagne bar. Le Ciel de Paris, Tour Maine Montparnasse, 75015 Paris, 01 40 64 77 64.
 
It's not unusual to catch sight of some stars at this chic and sleek address near the Champs-Elysées. Two professionals teamed up to oversee Caffe: the well-known Thierry Costes and Thierry Burlot. The latter worked in such places as Emporio Armani Caffè and Zebra Square, and here he delivers the Italian classics. Expect a satisfying meal with the organic egg, its runny yolk scattered with truffle, the fried squid, and the red mullet filets served with green peas, radishes and asparagus. Special Saké Menu at Restaurant Dominique Bouchet
Dominique Bouchet, former chef at La Tour d'Argent and Hôtel de Crillon, will launch a special menu devoted to sakés, available from September onwards at Restaurant Dominique Bouchet. The three-course meal, priced at €75, will offer such dishes as marbled foie gras with duck fillet, steamed lobster with caviar, and crispy cannelloni stuffed with strawberry, matched with three different sakés. Chef Shuffle
After the departure of former chef Christophe Pelé, La Bigarrade was temporarily closed. Fortunately, Yasuhiro Kanayama has taken his place. The Japanese-born toque showcases his savoir-faire by crafting creative dishes. Expect to be delighted by ingenuous combinations of tastes and surprising textures. Chef Amandine Chaignot of Raphael Young chef Amandine Chaignot honed her skills in restaurants such as Le Bristol and Le Meurice before assisting Christopher Hache at the stoves of Hotel de Crillon. She now expresses her considerable talent in the restaurant Raphael in the Hotel Raphael. Her menu includes dishes such as crab meat seasoned with white peaches and coriander oil.
