LInstant dOr has opened in Paris Just off the Champs-Elysées is L'Instant d'Or, offering creative French cuisine, with a few Mediterranean accents. Chef Frédéric Duca, a native of Marseille, presents dishes such as sea bass carpaccio with an oyster cream topped by caviar and apple perfumed with lime. Meanwhile, pastry chef Kiriko Nakamura delivers a melting chocolate biscuit accompanied by hazelnut crumble and a sugar-coated parfait. L'Instant d'Or, 36, av. Benoit Commemorates its 100th Birthday
The bistro Benoit, owned by Alain Ducasse, is commemorating its 100th birthday. For this occasion, a special menu with a glass of Champagne, foie gras, scallops, a roast suckling lamb and profiteroles is being offered for €100, and it includes a book with about 25 famous recipes from the restaurant and details of its history. Chef Shuffle
Christophe Guibert has replaced Jean-Sébastien Pouch at the stoves of Restaurant Lapérouse, the historical restaurant on the Left Bank. Guibert, a native of Le Mans, honed his skills in prestigious establishments such as L'Espadon, Taillevent and Le Cinq.
