Openings

Clarence Dillon, the vineyard that owned the appellations Haut-Brion, Mission Haut-Brion and Quintus, will open a new restaurant, Clarence, near the Champs-Elysées in fall 2015. Christophe Pelé, formerly at La Bigarrade, will helm the stoves and Antoine Petrus, previously at Restaurant Lasserre, will be in charge of the wine cellar. Green Dinners at La Bauhinia
Shangri-La Hotel, Paris, has launched the 100-percent green dinners taking place on the first Thursday of each month at La Bauhinia, in a nature-inspired décor. On this occasion, chef Christophe Moret prepares a five-course vegetable-focused menu at €58, which features such items as tomato Bloody Mary, spring rolls made with watermelon and soup herbs, and roasted turnips and beetroots. Fumiko Kono at La Cour Jardin
Alain Ducasse has invited the Japanese chef Fumiko Kono to propose her own dishes at La Cour Jardin at Hôtel Plaza Athénée. Among her signature selections, a bento box at €54 and raw salmon with avocado, soya vinaigrette sauce and yuzu will be served on the patio. The menu also includes the fare of chef Mathieu Emeraud, like the blue lobster with grilled vegetables and the unilaterally cooked red mullet with pommes boulangère.
