L'Opera Restaurant has opened in the Palais Garnier. The chef of this luxury brasserie is Christophe Aribert, from the gastronomic restaurant Les Terrasses in Uriage near Grenoble. His menu includes dishes such as foie gras, with honey cultivated on the roofs of the Palais Garnier; a pata negra pork chop with elderberry, honey and licorice; and the opéra, an oblong cake with coffee, chocolate and almonds. Former pork butcher David Baroche opened Baroche, a place where one can have breakfast, tea during the afternoon, and a meal at noon or during the evening. On the menu is a wide choice of salads, some Spanish delicatessen, a rib steak served with pommes grenailles, and specials of the day like shepherd's pie and a chestnut velouté enhanced by white truffle oil. Laperouse Welcomes New Barman
A new barman now officiates at Restaurant Laperouse, on the ground floor and behind the blue and golden front of the famous venue. Bertrand Merlette learned his job in the Hotel Plaza Athénée, and for twenty years worked in the bar of the Hotel Raphael. Among his favourite cocktails to prepare are the whiskey sour, dry martini, gin fizz and Bloody Mary. Galette des Reines at Le Dali Tiffany & Co. Charm Hidden in Le Meurice's Galette des Reines
Le Meurice's Galette des Reines will return for the fourth year. Pastry chef Camille Lesecq has composed a chocolate galette filled with frangipane sprinkled with chopped hazelnuts, and topped with whole hazelnuts. Hidden inside the galette this year is a special key charm made by Tiffany & Co. This treat will be available at Le Dali from January 2-22 and will be priced at € 14 per slice. Le Bristol Becomes Epicure
Formerly Le Bristol, the gastronomic restaurant of the eponymous hotel has changed its name and is now called Epicure. The new dining room, decorated by Pierre-Yves Rochon, overlooks a French formal garden featuring huge magnolias. Paris Cookbook Fair Returns
Cookbook connoisseurs, authors and publishers all unite at the Paris Cookbook Fair in conjunction with the 2012 Gourmand World Cookbook Awards, rewarding the best cookbooks in the world from more than 140 countries. Learn about the global cookbook market, promote international cooking, discuss new food trends and peruse more than 4,000 titles at Le 104 in Paris. Chef Shuffle
