Peruvian chef Gastón Acurio has launched Manko, his first restaurant in France Presiding over approximately 40 establishments located worldwide, Peruvian chef Gastón Acurio has launched his first restaurant in France. Just off the Champs-Élysées, Manko includes a bar and a cabaret. The menu features Peruvian favorites such as tapas, ceviches, sea bream and spicy beef fillet. Manko Paris by Gaston Acurio, 15, av. Thibault Sombardier helms Antoine, a luxurious seafood restaurant near the Pont de l’Alma. He has opened his own bistro, Mensae, in the Buttes Chaumont area. Expect traditional fare and a cozy atmosphere. Mensae, 23, rue Mélingue, 75019 Paris, 01 53 19 80 98.
 
Clarence Dillon, the vineyard that owned the appellations Haut-Brion, Mission Haut-Brion and Quintus, opened a new restaurant, Clarence, near the Champs-Elysées. Christophe Pelé, formerly at La Bigarrade, helms the stoves and Antoine Petrus, previously at Restaurant Lasserre, is in charge of the wine cellar. Chef Shuffle
Nicolas Sale (La Table du Kilimandjaro in Courchevel) has been appointed the new executive chef of the Ritz Paris. He will helm the stoves of L'Espadon, the gastronomic restaurant of the hotel.
