Chef Shuffle
Jean-Louis Namicos escapes Lasserre after a long stint to pick up the location where Joël Robuchon started: 16, Avenue Bugeaud, 75016 when it was Jamain.

Decamped from Alain Ducasse at the Hôtel Plaza Athénée, Christophe Moret invests the historical cuisine chez Lasserre. You will be treated by new dishes such as brill with vin jaune and wild mushrooms and lacquered lamb shank. Décor remains the same. Lasserre, 17, av. Franklin D. Roosevelt, Paris 75008, 01 43 59 02 13.

The team of Denis Courtiade and newly appointed chef Christophe Saintagne turn out a revolutionary menu at the famed Alain Ducasse restaurant in the palatial Hôtel Plaza Athénée. The cuisine delivers traditional dishes with fresh new twists. Think baby langoustines with caviar or fresh pasta with exotic cock parts. Stay tuned for a complete review update. Alain Ducasse, Hôtel Plaza Athénée, 25, av. Montaigne, Paris 75008, 01 53 67 65 00.
