Garry Dorr recently took over Bistro & Cie, the firm founded by his father, Willy, famous for having launched the all-inclusive menu at €42 with an apéritif, coffee and a semi-bottle of wine. What's new in four of his restaurants is a name change. Thus, the Bistrot de Breteuil has been rechristened as Le Grand Bistro and features an upgraded menu. Besides the usual selections, refined dishes are proposed for an additional charge, such as blue lobster from Brittany, pan-seared chanterelles with garlic, and rib steak from one of the best butchers in Paris, Hugo Desnoyer. Le Grand Bistro, 3, place de Breteuil, 75007 Paris, 01 45 67 07 27.

Chef Shuffle
Thibault Sombardier has recently replaced Mickaël Féval at the stoves of Antoine, a seafood restaurant near Pont Alma. The young chef honed his chops alongside Alain Dutournier at Carré des Feuillants and Au Trou Gascon, and from now on invites diners to experience the fresh cuisine of the sea. Lunch menu at €35. A new chef, 29-year-old Alexandre Zdankevitch, now rules the kitchen of L'Agapé Bistrot, a cozy place near the Pereire square.
