Danny Minch and Dylan Dodd, the owners of Walter Foods in Williamsburg and Walter's in Fort Greene, have opened Apollonia, an all-day café in East Williamsburg. There are plenty of green plants and a communal table, and a menu that offers the likes of whipped feta served with warm slices of pita, cast iron Greek chicken, and whole grilled branzino with chermoula. The Williamsburg Hotel's Mediterranean restaurant, Seven Seeds, offers a menu that includes miso-fermented hummus with paprika, Lebanese spiced confit duck wings, and whole roasted branzino with herbed salad. Seven Seeds, The Williamsburg Hotel, 96 Wythe Ave., Brooklyn, NY 11249, 718-362-8100.
 
MADRE, located in the lobby of Brooklyn’s Franklin Guesthouse, offers a menu of contemporary cuisine from chef Bryan Noury. Expect dishes like grilled octopus with romesco sauce and eggplant agnolotti. MADRE, Franklin Guesthouse, 214 Franklin St., Brooklyn, NY 11222, 718-389-8700.
 
MIMI's Louis Levy and brothers Daniel and Evan Bennett are behind Babs, a Village bistro that serves dishes like chicken andouille sausage with borlotti beans and smoked grapes, and veal brains with caviar and morels. In Alphabet City, Lamia's Fish Market offers a seafood-centric menu featuring dorado, snapper and branzino by the pound. The restaurant also has a raw bar. Look for wine and cocktails on tap, too. Lamia's Fish Market, 47 Avenue B, New York, NY 10009, 212-777-3650.
 
La Cubana is open in the Meatpacking District Havana is the inspiration for Food Network chef Carl Ruiz's Meatpacking District restaurant La Cubana, which features Cuban cuisine and live Latin music. The menu includes dishes like hand-folded empanadas, camarones enchilados atop crab grits, and ropa vieja. Among the Caribbean cocktails is the Banana Dream blending cachaça, muddled banana and lime. Sea Wolf owner Daniel Cipriani has opened Gemelli, an all-day Mediterranean-Italian rooftop restaurant in Bushwick. The spot also has an 18-seat patio. On the menu are homemade pastas such as cacio e pepe, and ricotta pancakes at brunch. Gemelli, 48 Cypress Ave., Brooklyn, NY 11237, 347-295-0731.
 
Gaudir began as a Monday night pop-up by Tastings Social, a catering and restaurant company. It is now a permanent Spanish restaurant serving tapas, paellas, grilled octopus and cocktails in East Harlem. Gaudir, 251 E. 110th St., New York, NY 10029, 212-744-4422.
 
Matt Rudolph, Larry Glogau, Max Glogau and executive chef Sean Underwood (an alum of Jean-Georges and Dirty French) are behind the southern-inspired restaurant The Ryerson in Crown Heights. The menu includes black eyed pea hummus, a Ryerson Double Burger, and fried chicken for two or four. The Ryerson, 698 Nostrand Ave., Brooklyn, NY 11216, 347-406-9703.
 
Nick Pfannerstill, formerly of Dovetail, and Alberto Miranda, who used to helm the drinks program at Belle Shoals in Brooklyn, have opened Nobody Told Me, a cocktail bar on the Upper West Side. Along with craft cocktails, there are shareable snacks like shrimp rolls and truffled queso, plus larger dishes such as a spicy chicken sandwich. Little Italy restaurant Marcellino serves dishes from its wood-burning oven, like a pizza made with a family recipe and roasted chicken with vegetables. When weather permits, dine on the outdoor patio. Marcellino, 178 Mulberry St., New York, NY 10012, 646-998-4576.
 
The Public House Collective’s Ryan Burke and Kenneth McCoy are behind La Ventura in the West Village, offering coastal cuisine in a casual setting. Chef Peter Lipson (Empellón) created an all-day menu that ranges from a hot chicken sandwich to grilled octopus with olive, yucca and curry mayonnaise, and sunchoke kebabs seasoned with Jamaican jerk spices. To drink, expect beer, wine, spritzes, and options like the Sassafras blending Old Forester rye, Pimm’s, grapefruit cordial, honey, Bonal and Q Ginger Beer. Gadi Peleg, the owner of Breads Bakery, is bringing modern Middle Eastern food to Arlo NoMad with his restaurant Lamalo, in the former Massoni space. His menu includes dishes like grilled chicken with spearmint yogurt and sumac onions, and octopus with preserved lemon butter, served with warm-from-the-oven Jerusalem laffa. Restaurateurs Keith McNally and Stephen Starr are reopening Pastis, the iconic French bistro that helped turn the Meatpacking District into the buzzy hub it is today. Menu classics like escargots, salade niçoise and steak frites will return alongside new items such as duck with olives and boudin blanc sausages.
