Restaurateur Gabe Stulman (Fedora, Perla, Jeffrey's Grocery, Joseph Leonard) is adding to his West Village empire. Chez Sardine, located on the corner of W. 10th and W. 4th Sts., is a Japanese-accented restaurant with a cool 1960s vibe. Chez Sardine, 183 W. 10th St., New York, NY 10014, 646-360-3705.
 
From the owners of Pulqueria and Apotheke comes The Butcher's Daughter, a vegan restaurant and juice bar in a space meant to look like an old butcher shop. The Butcher's Daughter, 19 Kenmare St., New York, NY 10002, 212-219-3434.
 
Nick & Stef's Steakhouse has re-opened for the season at Madison Square Garden. New additions to the menu include slow-roasted prime rib, herb fries with rosemary and sea salt, Szechuan long beans with pink peppercorns, and white cheddar potato gratin with Parmesan crumbs. Maysville, a restaurant named after a town in Kentucky, is bourbon themed and brought to you by the owners of Char No. 4. The Flatiron District eatery serves up meaty cuisine that pairs well with --- you guessed it --- bourbon. Maysville, 17 W. 26th St., New York, NY 10010, 646-490-8240.
 
An outpost of the legendary, 175-year-old Delmonico's in downtown Manhattan, Delmonico's Kitchen serves up its parent restaurant's signature dishes (lobster Newburg, baked Alaska) in a Midtown setting. Delmonico's Kitchen, 207 W. 36th St., New York, NY 10036, 212-695-5220.
 
Roman restaurant Antica Pesa has fired up its burners in Williamsburg. It is the New World child to the 80-year restaurant of the same name in Rome's Trastevere neighborhood. Antica Pesa, 115 Berry St., Brooklyn, NY 11211, 347-763-2635.

Le Cirque in New York Chef's "Classics" Menu at Le Cirque
Le Cirque is offering a Chef's "Classics" Menu to celebrate the launch of their cookbook A Table at Le Cirque. This special menu, which will be available until November 30th, features dishes created by chefs such as Daniel Boulud, Christophe Bellanca, Craig Hopson, and Jacques Torres. The four-course menu offers items such as wild Burgundy escargot, foie gras ravioli, herb crusted rack of lamb, and chocolate stove cake. The cost is $130 per person with an optional $70 wine pairing. A portion of the proceeds will be donated to City Harvest. To make reservations, call 212-644-0202. 25 Years of Aquavit
Aquavit is celebrating its 25th anniversary by offering a seven-course tasting menu for $125 ($200 per person with beverage pairings). Dishes include Nantucket Bay scallop and bleak roe; celeriac and sturgeon caviar; gravlax and pickled beets; cod and cauliflower; halibut and fennel; stone fruit and pistachio; and staple dessert Arctic Bird's Nest made with a goat cheese parfait egg. A French-American Eataly?
Jean-Georges Vongerichten recently publically spoke about opening an Eataly-style market in a space in ABC Carpet & Home where his ABC Kitchen restaurant exists. Chef Shuffle
Emma Hearst, one of GAYOT.com's Top Five Rising Chefs in the U.S. in 2011, has left her post at Lower East Side Italian restaurant Sorella. Her replacement is Molly Nickerson, formerly of Marea and Lincoln. Sorella, 95 Allen St., New York, NY 10002, 212-274-9595.
 
David Breeden is leaving his post at Per Se Per Se's executive sous chef, David Breeden, is leaving his post to head back to The French Laundry where he'll be replacing chef Timothy Hollingsworth. Breeden first started with Keller at The French Laundry as a chef de partie in 2005, before moving to Per Se in 2007, where he rose to sous chef after two years. Closings

Nathan's Famous at Coney Island has temporarily closed due to damage from Hurricane Sandy. This is the first time the iconic hot dog stand has closed in 96 years. Nathan's Famous, 1310 Surf Ave., Brooklyn, NY 11224, 718-946-2202.

Lowcountry, the southern-tinged West Village restaurant, has shut down. Italian restaurant Louro will open in its place in December. Lowcountry, 142 W. 10th St., New York, NY 10014, no phone.
 
The Upper West Side experiment with molecular gastronomy is over. Gastroarte, helmed by chef Jesus Nunez, has changed its name to Andanada 141 and Manuel Berganza from Madrid has been brought in as the new chef. Gastroarte, 141 W. 69th St., New York, NY 10023, 646-692-8762.
