Cathédrale, a Las Vegas incarnation of the flagship location in NYC’s Lower East Side, has debuted at ARIA Resort & Casino. Situated in the casino next to Catch, the 266-seat restaurant is a dramatic space with a theatrical and monumental ceiling installation in the main dining room, which is lined with blue leather banquettes. The Mediterranean coastal cuisine menu created by executive chef Jason Hall features whole Dover sole with lemon caper butter; 22-ounce Prime aged ribeye with rotisserie leeks and sauce vert; salt baked Mediterranean sea bass with rocket arugula, steamed potatoes and Sorrento lemon; and tableside crêpes suzette for two with orange caramel and vanilla chantilly. Complementing the cuisine is an expansive wine list and inventive takes on classic cocktails, such as The Quaternary with Ketel One vodka, Plymouth gin, Dolin dry vermouth, orange bitters, Castelvetrano olives and Kaluga caviar. Cathédrale is open daily for dinner.



 

• Laguna Pool House & Kitchen is now open inside Palms Place Las Vegas. Located on the 6th floor, the space features an expansive indoor lounge with open views of the pool terrace. The kitchen is helmed by chef Luke Palladino and the menu offers global fare for breakfast, lunch, happy hour light bites, a special poolside menu, dinner daily, late-night snacks and brunch on weekends. Highlights of the lunch and dinner menus include Korean fried chicken, roasted vegetable club, grilled branzino, rotisserie chicken, pork chop Milanese and smoked wagyu beef short rib. The brunch menu features items such as shrimp & grits, pastrami hash, challah French toast, sushi, seafood tower and Big John’s Son—a 24” all beef hot dog, topped with shaved prime rib Philly cheese steak, sautéed onions, peppers, mushrooms and cheese sauce, served on a bed of fries. • Tailgate Social Sports Bar & Grill Offering Lobster Deal and Local Beer
Tailgate Social Sports Bar & Grill at Palace Station is offering a New England-style lobster boil special. Priced at $29 and available throughout the month of June, the special features a Maine lobster with Littleneck clams, Andouille sausage, Red Bliss potatoes and corn on the cob. In addition, diners can pair their lobster boil with more than 27 beers including a variety of beers from local Las Vegas breweries such as UNLV Rebel Spirit Golden Ale and Hop Vegas West Coast IPA from Crafthaus Brewery, Chantilly Cream Ale from Las Vegas Brewing Co. and Tailwagger Wheat Beer from Big Dog's Brewing Company. • Limoncello Fresh Italian Kitchen Introduces Expanded Menu
Limoncello Fresh Italian Kitchen has introduced new menu items from Top Chef star, chef/partner Carla Pellegrino. Highlights include jumbo lump crabmeat cocktail with house-made cocktail sauce; linguini with jumbo shrimp and fresh arugula in a white wine and garlic cherry tomato sauce; house-made squid ink spaghetti with scallops, shrimp, calamari, mussels and clams in a white wine and tomato sauce; pear and arugula salad; mussels and clams prepared in a white wine broth; and new presentations for steaks, which include a 16-ounce strip, 20-ounce rib eye and 44-ounce tomahawk with port wine demi-glace, poivre and porcini mushroom cream sauces. Pellegrino has also brought some of her time-honored creations to Limoncello, such as lobster, crab meat, shrimp and calamari salad brunoise citronette; grilled Spanish octopus served with fava bean puree and braised Belgian endives; and 12-ounce lamb chops slightly breaded and accompanied by house-made mint sauce. • Wynn Las Vegas Launches Min’s Test Kitchen Summer Pop-Up
Wynn Las Vegas has opened Min’s Test Kitchen, a new pop-up concept from Min Kim, executive chef of Wynn’s fine dining Mizumi Japanese restaurant. Located within Jardin and open through late September 2023 while Mizumi is closed for remodeling, the new concept encapsulates chef Kim’s diverse culinary background inspired by various countries across Asia and the Pacific where he has lived, learned and cooked. Menu highlights include a contemporary version of cod karaage with silken tofu, ice plant, dashi soy and brown rice vinegar; Japanese purebred olive wagyu made with olive-fed wagyu raised in the Kagawa prefecture of Japan; and chef Kim’s elevated take on steamed pork belly bossam served with pickled radish, lettuce and fermented soy bean.  Guests can also indulge in chef’s omakase menu, which will feature several courses and off-menu specials. • Balla Italian Soul Serving New Seasonal Dishes and Cocktails
Balla Italian Soul inside SAHARA Las Vegas has announced an array of new seasonal dishes and cocktails. The new menu additions include spring misto with butter lettuce, peas, spicy salumi and ricotta salata; grilled lamb sausage with almonds, charred eggplant, snap peas and mint; baby artichokes with alla Romana, mint and lemon; steamed mussels with pancetta, preserved lemon and green garlic butter; and rotolo pasta with rabe, green garlic, pecorino and morels. The new cocktails are The Show Girl—Tito’s Vodka, Sakura Vermouth, coconut cream and Barolo Chinato; Paloma Bianco—El Jimador Tequila, Bitter Bianco, grapefruit, agave nectar and lime; Regalita—Oxley Gin, prickly pear, Carpano Bianco, ginger beer and butterfly pea tea; and Italian Summer—Italicus Rosolio, Dry Curaçao, Lillet Blanc, lime, strawberry and sparkling wine.
